Lorenzo Murray says you must do it yourself to grasp the fundamentals. For your first practice, throw a rope at the wooden horse.

※ How to Capture a Wild Horse
1. Buy a Capturing Rope from a Stable Keeper.
2. Craft Lump of Raw Sugar by Heating (Processing) Raw Sugar x10 and Mineral Water x1.
3. Buy Raw Sugar and Mineral Water from an Inn Keeper NPC.
4. Approach a Wild Horse (do not get too close, or it will run away).
5. Use the Capturing Rope, then press (Attack1) while aiming at the horse (the reticle must be red).

7. When you succeed and the tug-of-war begins, move forward slowly.

ALTERNATIVE WAY [!!]
if there are too many people on queue and you tired to wait for wooden horse to appear, there is a life hack :
> you can catch the wooden horse in the heidel! its not mandatory on olvia !
> see image bellow
> fix 1 : if you cant catch it , or its bugged , you need to use the rope, and go far away and then approach slowly
> fix 2 : if you cant at all , try to do chain quest from horseman of heidel - Vanacil and do 2 quest
